The "Dolphin," Coryphaena hippurus,
also known as Mahi Mahi, dolphin-fish, or dorado is a
surface-dweller found in off-shore tropical and subtropical waters worldwide.The
name "mahi-mahi" (which means strong
in Hawaiian), has been adopted recently on restaurant menus, to avoid any
confusion the general public may have between these fish and dolphins
(Flipper!!), which are mammals. Mahi mahi is notable and very popular for its
flavor and firm texture.
Dolphin are carnivorous, feeding
on flying fish, crabs, squid, mackerel, and other small fish and have a lifespan
of no more than three to four years.
Sport catches average 15 to 30 pounds. They are noted for their dazzling
colors: golden on the sides, bright blues and greens on the sides and back.
Mature males also have prominent protruding foreheads. Mahi-mahi are highly
sought game fish because of their beauty and fighting ability. Mahi-mahi
are fast swimmers as well, with a top swimming speed of 50 knots.
